Carrot-Apple Chia Seed Muffins

I recently tested out a Carrot-Apple Chia Seed Muffin recipe from Tesco Real Food, a grocery chain in the UK and it was actually amazing!

Since I didn’t have light olive oil or vegetable oil, I decided to use coconut oil and it worked out very well.

Here’s the recipe:

  • 100g (3 1/2oz) carrots, finely grated
  • 75g (3oz) apples, coarsely grated
  • 1 tsp ground cinnamon
  • 1 lemon, finely zested
  • 3 tbsp chia seeds
  • 120g (4oz) soft light brown sugar
  • 75ml (3f oz) mild olive oil or vegetable oil
  • 2 eggs
  • 120g (4oz) self-raising flour
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 tbsp rolled oats

These muffins were so good that my family was off taking three of them to work, so I had to whip up a new batch.ย The second time around, I changed things up a bit. I cut down the sugar to 80g and added 1/2 cup of chopped walnuts.

Here’s my recipe modification and the nutritional information I generated from MyFitnessPal:

  • 1/2 tsp bicarbonate of soda
  • 1 tbsp rolled oats

These muffins are great as a quick breakfast for busy mornings and wonderful to add as part of your meal prep.
