10 days until Christmas calls for baking up some delicious holiday treats! I’ve decided to start out my Christmas baking with some peppermint treats that are perfect for gifting. Peppermint seems to be a love or hate it kind of thing with most people and I’m definitely someone who loves it. Mint chocolate ice cream? Peppermint white mocha? Give me all of it!
To start, you’re going to need to bash up some candy canes. The best part. Been stressed out with final exams? Work in retail and are sick of the Christmas rush? Put some candy canes in a plastic bag, grab a rolling pin and start bashing up some candy canes.
I added my own twist to the double chocolate chip cookie recipe on the package of the Hershey’s Chipits package:
- 1 cup butter
- 3/4 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 2/3 cup flour
- 1/3 cup Hershey’s Cocoa (…or whatever cocoa you have on hand)
- 1 tsp baking soda
- 1/2 tsp salt
- 1 package of Chipits Dark Chocolate Chips
Find the recipe here for instructions on how to make them. After letting them bake, I added a bunch of the crushed candy cane on top immediately. I’m thinking of adding candy cane in the middle of the cookie next time I make them to make it even more minty!
For another special treat, I basically make a really simple Peppermint Bark every year.
All you do is get some dark chocolate, melt it in a glass bowl over a pot of boiling water and pour in a pan lined with parchment paper or aluminum foil. Freeze it and melt up some white chocolate for your second layer. Pour it over the hard dark chocolate, add some crushed candy canes and freeze that again.
Take it out of the freezer, break it into pieces and you have a really simple treat that is so yummy on its own, but can also be added as a special touch to the tops of cakes and cupcakes.
